Parchment & Baking Paper

Parchment/Baking Paper is a cellulose-based paper that is used in baking as a disposable non-stick surface. Modern parchment paper is made by running sheets of paper pulp through a bath of sulfuric acid ; a method similar to how tracing paper is made. Sometimes zinc chloride can also be used. This process leads to partially dissolving or gelatinizing the paper. This treatment forms a material with high density, stability, and heat resistance, and low surface energy, imparting it with non-stick or release properties. The treated paper has appears to be similar to a traditional parchment, and its stability is sometimes used for legal purposes where traditional parchment was used. The non stick properties can be also achieved by employing a coated paper, for which a suitable release agent (a coating with a very low surface energy and the capability of withstanding temperatures involving the baking or roasting process) is deposited onto the paper's surface; silicone is frequently used, but only after it is cured with a suitable catalyst.
